Method

1. 1Step : Wash and slice the mushrooms thinly.
2. 2Step : Peel and slice the onions. Peel and finely mince the garlic.
3. 3Step : In a skillet over low heat, soften the onions in the butter. Season with salt and pepper, and let cook while stirring regularly until the onions turn brown. Add the mushrooms, garlic, balsamic vinegar, and sugar, and let cook
4. 4Step : Prepare the mayonnaise: Mix the egg yolk and mustard together. Whisking continuously, gradually drizzle in the rapeseed oil. Dissolve the salt with a few drops of vinegar, then stir it in. Add pepper.
5. 5Step : Spread a very thin layer of mustard over the bread slices. On 4 of the slices, mustard-side up, place a slice of cheddar. Cover with the caramelized mushrooms and onions, and finish with a slice of Gruyère. Close the croque-monsieur, mustard side
6. 6Step : Cook the croque-monsieurs in a dry frying pan over medium heat for 3 minutes on each side, or in a sandwich maker.
7. 7Step : Cut the croque-monsieurs in half just before serving. Sprinkle with chopped parsley.
