Method

1. 1Step : Melt the chocolate, broken into small pieces, in a double boiler or over low heat. Once completely melted, stir gently until smooth. Remove from the heat and let cool until lukewarm.
2. 2Step : Separate the egg yolks from the whites. Add the salt to the whites and whip them until very stiff peaks form.
3. 3Step : Gradually pour the melted chocolate over the egg yolks, whisking vigorously.
4. 4Step : Gently fold in 1/3 of the whipped egg whites with a spatula, then gradually add the rest, lifting the mixture from bottom to top to evenly distribute the chocolate without deflating the whites. Divide among 6 small glasses or dessert cups.
5. 5Step : Chill the chocolate mousse in the refrigerator for at least 3 hours to set. Serve well chilled.
