Method

1. 1Step : Prepare the sweet shortcrust pastry: combine the flour and the butter cut into pieces in the bowl of a stand mixer fitted with the paddle attachment.
2. 2Step : Add the icing sugar, egg, and a pinch of salt, then mix until the dough comes together smoothly.
3. 3Step : Wrap it in cling film and chill in the fridge for 30 minutes.
4. 4Step : Meanwhile, peel the pears, taking care to leave their stems intact.
5. 5Step : Core the pears by scooping out a small cone shape using your vegetable peeler.
6. 6Step : Stuff each pear with a small knob of butter.
7. 7Step : Preheat the oven to 170°C.
8. 8Step : Roll the dough into ropes about 1 cm thick.
9. 9Step : Coat the pears with ground almonds and place them standing upright in the baking dish.
