Method

1. 1Step : Scald, peel, deseed, and crush the tomatoes.
2. 2Step : Peel and crush the garlic.
3. 3Step : Stem, deseed, and thinly slice the chili pepper.
4. 4Step : Peel and thinly slice the spring onions or regular onions.
5. 5Step : Sweat the spring onions in 3 tablespoons of oil.
6. 6Step : Add the tomatoes, garlic, and chili pepper.
7. 7Step : Simmer for 30 minutes over low heat. Season with salt and pepper at the end of cooking.
8. 8Step : Cut the chipolatas into chunks and brown them with the remaining oil in another frying pan.
9. 9Step : Serve the sausages with the rougail and sprinkle with chopped parsley.
