Method

1. 1Step : Peel the butternut squash
   
2. 2Step : Cut it into roughly even cubes, and cook them in boiling salted water for 7-8 minutes, so they are tender yet still have a bit of bite
   
3. 3Step : In a skillet with butter, sauté your minced garlic with the parsley, then add the chopped mushrooms and your butternut squash cubes. Adjust the seasoning and let cook for 5 minutes
   
4. 4Step : Add the white wine, then the cream, stir, and let cook for another 5 minutes
   
5. 5Step : Divide among your baking dish(es), and top with your Mont d'Or
   
6. 6Step : Place in a preheated oven at 220° for 20 minutes
   
7. 7Step : When your gratins are almost ready, start cooking your tournedos steaks
   
8. 8Step : Plate with the white wine and shallot sauce, and enjoy your meal

1. 1Step : Peel and finely slice the shallots
   
2. 2Step : Sweat the shallots in a skillet with butter
3. 3Step : Deglaze with the white wine, scraping the bottom of your skillet well with a spatula, and reduce until almost dry
4. 4Step : Add the cream and adjust the seasoning
5. 5Step : Let simmer and reduce for 5 minutes over low heat
