Method

1. 1Step : Mix 120gr of softened butter with 90gr of sugar and a teaspoon of vanilla extract. Once the butter is nice and creamy, add an egg. Mix well. To finish, add 315gr of flour and a pinch of fleur de sel.

3. 3Step : Roll out to 3mm thick. Cut out heart shapes, then slice them in half vertically. Round the edges, and using a small round piping tip, cut out eyes, then use a larger tip for the mouth on half of the cookies.

6. 6Step : Meanwhile, prepare the praline ganache. In a bowl, place 75gr of milk chocolate chopped into small pieces and 140gr of homemade praline paste. Bring 50gr of cream to a boil.
7. 7Step : Pour over the chocolate and stir until the chocolate has melted. If the chocolate doesn't melt completely, pop it back in the microwave for 10/20sec.
8. 8Step : Once your cookies are baked and cooled, dust them with powdered sugar only on the cookies with faces, spread the ganache over the solid shapes, and sandwich the cookies together.
