Method

1. 1Step : Crush the rusks into crumbs and mix them with the melted butter.
2. 2Step : Place a pastry ring lined with acetate sheet on your serving platter, then spread the biscuit/butter mixture over the bottom, pressing down firmly using a glass. Place everything in the freezer for 10 minutes.
3. 3Step : In a bowl, whisk the fresh goat cheese with the Skyr and the pre-chopped shallot. Season with salt, pepper, and basil. If you use fresh basil, it's even better!
4. 4Step : Once you obtain a smooth mixture, pour the preparation into the ring and smooth the surface. Put everything back in the fridge for at least 1 hour.
5. 5Step : After chilling, remove the ring as well as the acetate sheet. Arrange the halved cherry tomatoes on top and serve!
6. 6Step : For an even more delicious touch, add thinly sliced prosciutto and a drizzle of balsamic glaze. You can also mix things up with smoked salmon, trout, diced feta, or even pine nuts, red onions…
