Method

1. 1Step : Preheat the oven to 180°C.
2. 2Step : Separate the egg whites from the yolks. Whisk the yolks with the sugar until pale and fluffy.
3. 3Step : Whip the egg whites until stiff peaks form and gently fold them into the yolk mixture.
4. 4Step : Add the sifted flour and mix.
5. 5Step : Pour onto a baking sheet and bake for 10 minutes.
6. 6Step : Roll the warm sponge cake in a damp tea towel.
7. 7Step : Heat the cream and melt the chocolate.
8. 8Step : Mix the cream and chocolate together to obtain a ganache.
9. 9Step : Spread the ganache over the sponge cake and roll it up.
10. 10Step : Decorate with the remaining ganache.
