Method

1. 1Step : Peel and thinly slice the onions. Cook them gently over low heat, letting them soften and caramelize for about 10min.
2. 2Step : Peel the potatoes and slice them thinly using a mandoline.
3. 3Step : Cut the smoked herrings into small pieces.
4. 4Step : In a mixing bowl, combine the thick crème fraîche, a splash of milk if needed, the spices, the lemon juice, and season with salt and pepper to taste.
5. 5Step : In a gratin dish, pour a drizzle of olive oil, then layer half the potatoes, the smoked herrings, the onions, and half of the cream mixture.
6. 6Step : Add the other half of the potatoes and pour over the remaining cream mixture. Sprinkle with breadcrumbs and dot with small knobs of butter.
7. 7Step : Bake for 40min at 180°C. It's ready!
