Method

1. 1Step : In a glass bottle, mix the kefir grains, sugar, and lemon juice with a little water. Dissolve the sugar well.
2. 2Step : Add the dried figs and fill the bottle with water.
3. 3Step : Cover the bottle with a cheesecloth secured with string, allowing air to circulate.
4. 4Step : Leave to ferment at room temperature for 24 to 36 hours (less in summer). The drink is ready when the figs float to the surface.
5. 5Step : Strain the drink and bottle it with an airtight stopper.
6. 6Step : Store the water kefir in the refrigerator.
7. 7Step : Rinse the kefir grains to use again, or store them in the refrigerator in a sealed jar.
