Method

3. 3Step : Freeze the frangipane disc.
4. 4Step : Place the pistachio cherry frangipane onto a disc of puff pastry.
5. 5Step : Moisten the edge around the frangipane with water.
6. 6Step : Cover with the second pastry disc.
7. 7Step : Seal the edges by pressing down with the side of your hand.
8. 8Step : Prepare the egg wash: mix the egg, icing sugar, and whipping cream.
9. 9Step : Flip the galette over onto parchment paper.
10. 10Step : Brush on the egg wash, avoiding the edges.
11. 11Step : Refrigerate for 1 hour.
12. 12Step : Apply a second coat of egg wash.
13. 13Step : Take the galette out of the refrigerator.
14. 14Step : Score a pattern on the galette with the back of a knife.
15. 15Step : Preheat the oven to 180°C.
