Method

1. 1Step : Grate two unpeeled zucchinis and squeeze them well in a clean kitchen towel to remove as much water as possible.
2. 2Step : Preheat the oven to 190 degrees.
3. 3Step : In a mixing bowl, combine the grated zucchini, Beaufort cheese, eggs, and minced garlic and shallot. Add the chopped parsley and a few chiffonade basil leaves, breadcrumbs, cornstarch, and olive oil. Season with salt and pepper.
4. 4Step : Mix well.
5. 5Step : Spoon the mixture onto a baking sheet lined with parchment paper. It's best to use cookie cutters to make nice, neat croquettes.
6. 6Step : Bake for 20/25 minutes at 190 degrees.
7. 7Step : Time to eat!
