Method

1. 1Step : Melt the butter and set aside at room temperature.
2. 2Step : Zest the lemon and rub the zest into the sugar and eggs. Whisk until pale and fluffy.
3. 3Step : Add the rum, cream, and salt. Whisk to combine.
4. 4Step : Sift the flour with the baking powder and fold it in three additions. Mix gently.
5. 5Step : Add the cooled melted butter and gently fold to combine.
6. 6Step : Pour the batter into a buttered and floured loaf pan. Bake for 50 min to 1h at 150°C.
7. 7Step : Bring the water and sugar to a boil for the syrup. Remove from heat and stir in the lemon juice.
8. 8Step : Pour the syrup over the cake.
